Chicken Thighs and Potatoes (or Brussels)

  1. Preheat oven to 450.
  2. Trim and half Brussels or quarter potatoes
  3. Place in baking sheet and drizzle with oil
  4. For potates season with salt, pepper and paprika
  5. Place the baking rack on top of Brussels or potatoes
  6. Place chicken on top of rack so they are directly over Brussels
  7. Pat chicken dry with paper towel.
  8. combined the baking powder, salt, peper, and Italian seasoning
  9. drizzle a light coat of oil onto the chicking and sprinkle seasoning over the top
  10. bake for 35-40 min
  11. Broil 1-2 min for crispier skin if needed.
