Chicken Thighs and Potatoes (or Brussels)
Ingredients:
- 8 Bone in Skin on Chicken thighs
- Gold potatoes or Brussle Sprouts
- 1 tsp baking powder
- 1 tsp Italian seasoning
- 1 tbsp kosher salt
- 1/2 tsp black pepper
- olive oil
Instructions
- Preheat oven to 450.
- Trim and half Brussels or quarter potatoes
- Place in baking sheet and drizzle with oil
- For potates season with salt, pepper and paprika
- Place the baking rack on top of Brussels or potatoes
- Place chicken on top of rack so they are directly over Brussels
- Pat chicken dry with paper towel.
- combined the baking powder, salt, peper, and Italian seasoning
- drizzle a light coat of oil onto the chicking and sprinkle seasoning over the top
- bake for 35-40 min
- Broil 1-2 min for crispier skin if needed.
